Why Did The Chicken Cross The Road?

To land on my plate.

Good morning!  It's been crazy here, and I've finally gotten time to sit down and write a blog post. Today's post was a request.  My friend Triosha is changing her diet (woot woot!! I'm behind you 100% girl!) and wanted some healthy recipes, the majority of them being chicken.  I've actually had a lot of trouble thinking of recipes for chicken because a)I don't actually eat a lot of chicken anymore, and b) it's so versatile that you can start with a basic recipe and just tinker with it to your heart's content.  I also want to do some sides that taste good and are good for you!  I've been asked time and time again for recipes, so I'm thinking about making this a regularly-scheduled post (when I actually have a blog schedule) and featuring a couple every week or so.  I'm constantly in the kitchen cooking up something and if I can't share the actual dish with you, I might as well share the recipe!

First off, I want to start with a list of my cupboard staples.  These are just some things that I always have on hand.  You can make the juiciest chicken breast, or the biggest salad, but if it is bland, you're going to get bored and you will resort to unhealthy options.  Plain and simple.  Also, having these foods on hand will make it easier when you need to whip something up fast.  After all, preparation is the key to success!

Seasonings
I'm a big fan of seasonings.  As in, there are probably fifty in my cupboard right now.  They're great because, like I mentioned earlier, you can take a basic chicken recipe, and change up the spices so you never have to eat it the same way twice.  They're also great for adding on eggs, popcorn, pasta, etc.

  • Red Pepper Flakes
  • Salt & Pepper (obviously)
  • Mrs. Dash -I have four different kinds in my cupboard right now!
  • Kernel Season's Popcorn Seasoning -don't let the name fool you.  I put this on EVERYTHING.  I especially enjoy the Buffalo Wing and Parmesan Garlic flavors mixed together on hard-boiled eggs. Current cupboard inventory: six different flavors!
  • Dill Weed
  • Basil -fresh and dried
  • Cinnamon
  • Lemon Pepper Seasoning
  • Garlic Powder
  • Onion Powder
Condiments
  • Mustard -Another food that I have several different varieties of at all times
  • Hot Sauce
  • Balsamic Vinegar
  • White Vinegar
  • Olive Oil
  • Teriyaki Sauce
  • Horseradish
  • Minced Garlic
  • Salad Dressing -My favorite is Ken's Sweet Vidalia Dressing!
Refrigerator Items
  • Skim Milk
  • Greek Yogurt -I buy a single-serving size at a time.  I've had too many go to waste on me because I can't use them fast enough.
  • Eggs -I need to invest in a chicken.
Dry Goods
  • Canned Chicken
  • Pouch Tuna
  • Microwavable Instant Rice -Minute Rice brand sells it in in 2 microwavable cup packages.  Best marketing plan ever.
  • Canned Beans -cheap, easy, and will never go bad in your cupboard.  There are so many cans of beans in mine right now I could open a store.
  • Canned Tomatoes
  • Canned Pumpkin -NOT pumpkin pie filling.  Makes easy and quick desserts, breakfasts, etc.
  • Noodles
  • Tomato Sauce
  • Cooking Spray
It seems like a lot, but most of these items are inexpensive.  If you buy a few at a time, once you have your pantry stocked, you just need to replace items as they run out.  This is nowhere near everything I have.  These are just my most commonly used items.  You'll also notice that most of my recipes are my cupboard staples just thrown together.

Now, on to what you've all been waiting for!!  Note: I rarely measure anything, so you will see a lot of super-specific terminology such as: "Some, a handful, a spoonful" etc.  Have fun with it.  If you like more of one ingredient than another, feel free to add whatever it is you like.  It's just cooking, not rocket science.  Most of these recipes will also make at least 2 servings, so feel free to save the leftovers for later, to eat it all in one sitting, or to share.  They are also easy to customize so if you don't like an ingredient, feel free to replace it or leave it out completely.

Basic Baked Chicken
I cannot express to you all the things you can do with this.  You can shred it up to make chicken salad, add taco seasoning for chicken tacos, throw on some seasonings (Southwestern seasoning makes an AMAZING meal), cut these into strips and dip them in honey mustard, or boil some pasta and add some tomato sauce and cheese for a super-easy chicken parmesan.  The possibilities are endless.

You Will Need:
Chicken Breasts -as many as you'd like, cooking time may vary depending on the amount you do
Cooking Spray
Salt and Pepper
Any Optional Seasonings -this is where you let your creativity flourish

Method:
  • Preheat oven to 400 degrees
  • Coat your pan with cooking spray, or your lubricant of choice -don't want chicken stuck to the bottom!
  • Season your chicken -salt and pepper is a good place to start.  Throw some Mrs. Dash on there if you would like.
  • Bake for 40-50 minutes, until your chicken is no longer pink in the middle (if using a meat thermometer, make sure the inside is at least 160 degrees.  Salmonella doesn't look good on anybody)

Mini Chicken Salad Boats
Now, take that chicken you just baked and shred it up!  These make a quick lunch or snack and travel well so you can eat them at work or school.  Feel free to use canned chicken or replace the chicken completely with canned tuna.

You Will Need:

For Chicken Salad:
Cooked or Canned Chicken
Mayonaise, Miracle Whip, or Greek Yogurt
Salt and Pepper
Dried Cranberries
Finely Chopped Onion
Finely Chopped Celery (optional)
Optional Seasonings

For Boats:
Miniature bell peppers


Method:
  • Shred your chicken with a fork, ensuring there are no large chunks
  • In a medium size bowl (depending on how much you're making), combine all ingredients for the Chicken Salad.  You want the mixture to stick together, but not swimming in the sauce.
  • Wash and dry your miniature bell peppers thoroughly.  Slice in half and remove the seeds and veins.  I personally leave the stems on top (just don't eat them!) because it will help hold your boats together.
  • Stuff your peppers with chicken salad and enjoy!
From one can of chicken, I can usually get about 12 boats.  This would be easy to multiply for a picnic or a party.  I haven't found anybody who didn't like them!

Big Chicken Salad Boats
Because some like it big.

You Will Need:

Your Chicken Salad Recipe

For Boats:
Large Bell Pepper (I used green because it was what I had, but I would have preferred red, personally)
Spring Mix

Method:
  • Prepare your chicken salad in the same way as the mini boats recipe
  • Wash, slice in half, de-seed, de-vein, and decapitate (cut the stems off this time) your bell pepper.
  • Wash your spring mix
  • Lightly pack some of your spring mix into each half of your bell pepper.  It's okay if it won't stay packed.  You don't want to be too rough, or you'll bruise the salad mix.  The chicken salad will hold it in place.
  • On top of the spring mix, scoop in some of the chicken salad. Try to get to a seat before devouring these.
Fajita Bowl
This recipe was created out of desperation.  I was hungry, I wanted Mexican Food, I figured, how hard could it be?  It wasn't.  I wish I had written this recipe down because I feel like I'm forgetting something...I will edit it later if I remember.

You Will Need:
Cooked Chicken (see how handy canned chicken is becoming?)
Chopped Onion
Chopped Bell Pepper
Salt and Pepper, to taste
Minced Garlic, to taste
Black Beans (kidney beans would work well, too)
Cooked Rice (remember the minute rice we discussed?)
Lettuce
Chopped Tomato

Optional Toppings:
Sliced Black Olives
Salsa
Guacamole
Sour Cream or Greek Yogurt -they taste the same to me
Shredded Cheddar or Pepper Jack Cheese

Method:
  • Lightly spray a skillet with cooking spray, or use a non-stick pan
  • On medium to medium-high heat, saute your onions and peppers until soft, adding the minced garlic, salt, and pepper
  • While onions and peppers are sauteing, prepare your minute rice or heat up your leftover rice in the microwave
  • To skillet, add in cooked chicken, black beans, and optional black olives. Turn heat down to medium or low and heat until warmed through, stirring occasionally.
  • While your chicken combination is heating through, in a bowl start with a handful or two of lettuce, some chopped tomato, a big couple of spoonfuls rice.  When your chicken is done, put on anywhere from one-third to one-half of the mixture.  Top with any of my suggested toppings (I used guacamole and cheese that night) or add any of your own!
  • Enjoy!
Honestly, that's about it for my chicken recipes.  When I'm in the mood for chicken, I honestly just use that basic baked chicken recipe and add whatever spices I'm feeling that day.  But I still have just a few more I want to share!

Bruschetta Flatbread
I love bruschetta.  This is essentially a caprese pizza.  The balsamic reduction is optional, but trust me, you'll want to opt-in.

You Will Need:
For Flatbread:
One Sandwich Wrap or Flatbread
Shredded Mozzarella Cheese
Garlic Powder
One Medium to Large Tomato
Diced Onion
3 or 4 fresh Basil Leaves, or about half a tablespoon of dried basil.
Olive oil, for drizzling
Grated Parmesan Cheese, optional

For Balsamic Reduction:
1 Tablespoon Brown Sugar
Two-thirds Cup Balsamic Vinegar

Method:
  • On the stove top, start your balsamic reduction.  This part takes the longest, so don't start cooking the flatbread until your reduction is finished.
  • Combine the brown sugar and balsamic vinegar in a small sauce pan over medium to medium-high heat.  Stir occasionally until the mixture has thickened up and is an almost syrup-like consistency.  This can take anywhere from 10-20 minutes.
  • Once the balsamic reduction has started to thicken, preheat your broiler.
  • On a pizza pan, lay your flatbread or wrap.  Sprinkle with a handful of mozzarella cheese, garlic powder, salt, pepper, and dried basil (if not using fresh) to taste. Set aside.
  • Chop up your tomato into small pieces.  Dice your onion, and put both in a small bowl.  Chop the fresh basil into small strips and add to bowl.
  • Once the reduction is finished and your broiler is preheated, put your flatbread in the oven for approximately 2 minutes Watch this carefully. It will burn.
  • Carefully take the flatbread out of the oven and, on top of the melted cheese, spread out your tomato combination.  Optionally, sprinkle with a little shredded parmesan.
  • To warm everything up, put the flatbread back in the oven for 30 seconds to 1 minute. Again, watch it carefully.
  • When your flatbread is finished, drizzle with a little bit of olive oil and some of the balsamic reduction.  Save any leftover reduction in the refrigerator.
Sweet Onion Copycat Dressing
I'm completely and totally in love with the Sweet Onion Dressing from Subway.  While this is not a true copycat because it isn't spot on, this is, I think, as close as it can get.  This isn't so much a recipe as much as it is combining two ingredients, but it's no less amazing.

You Will Need:
Ken's Brand Sweet Vidalia Onion Dressing
Balsamic Reduction

Method:
  • In a small bowl, pour in some of the dressing.
  • Using a fork, lightly drizzle the balsamic reduction into the dressing, tasting as you go and adjusting the ratio accordingly. Mix well to combine.
  • Boom, done.
5-Bean Salad
This is the easiest recipe you'll ever make (next to that sweet onion dressing).  It's light, filling, and perfect for summer!  The sauce is very adjustable, too.  You want enough sauce that it will sink to the bottom (so you can mix it back into the salad), but you don't want the salad to be drowning in it.  This stores very well for up to a week in the refrigerator, and definitely tastes better the longer it sits.

You Will Need:
2 cans of Green Beans
1 can of Wax Beans
1 can of Garbanzo Beans (chickpeas)
1 can of Kidney Beans
1 can of Great Northern Beans
    **You can use any five types of beans, these are just what I use.  This recipe is THAT customizable.
Diced Onion

For Dressing:
one-fourth cup white vinegar
one-fourth cup sugar

Method:
  • In a small bowl, combine the white vinegar and sugar. Stir well, and set aside.
  • Drain the green beans, wax beans, and chickpeas.
  • Rinse and drain the kidney beans and great northern beans (Helpful hint: if the beans are only covered in juice, just drain them.  If they get sauce-y in the bottom of the can, rinse them well)
  • Combine all of the beans in a large bowl, tossing lightly.  Add in the onion and pour on the dressing.  Toss the salad again to combine, and refrigerate before serving. Get your appetite on because this recipe makes a LOT of bean salad.
There you go!! These recipes are easy to make, perfect for the summer when you don't want to use the oven a lot, and are easy to adapt to your needs.  I hope you enjoy these as much as I do!  Leave me some comments if you try them.  As always, requests are welcome.  Have a great day!

February Favorites 2015

Hey lovelies!

The first quarter of my year has been...well, less than ideal.  I was in the hospital for part of January, and then February was filled with doctors appointments, and Tuesday I finally had my gall bladder removed.  Over the next six weeks, my list of fun things to do is pretty slim, so I figure I might give my blog a bit more attention.

Monthly favorites videos are my favorite ones to watch on Youtube.  I find word of mouth to be the best way to discover new products and to really get my money's worth when I decide to invest in something.  You wouldn't stick with a product that you didn't love would you?  Of course not!!  A lot of my favorites from February were recommended through past videos I've seen (very few of these products are actually new), but some were from my own experimentation.

Health Favorites

I wasn't allowed to do a ton of exercising in February, and my diet slacked pretty hard, too.  It's part of life, and there's no reason to get down about it!  I made some wonderful uses out of chia seeds.  I got this 20 ounce container for about $10 at walmart, and they last a really long time. What I do is I take 1 cup of water and 3 Tablespoons of the chia seeds, combine them in a container with a lid, and let the chia seeds get gelatinous overnight.  They take on the texture of tapioca, and hands-down my favorite use for them after that is in tea!  Fruity teas sweetened with some stevia are my favorites, but you can use any tea you like.  Check out pinterest for other awesome uses (and yes, chia seeds are exactly what chia pets are made out of)!



I'm not sure what it is about Smart Water that I love.  I've never been very picky about bottled water.  Tap water always did just fine for me.  It's probably a marketing trick.  I love the cute little critters on the inside of the bottle, I love that the bottle itself is aesthetically pleasing, and I love that I can get it in a liter size.  Also, the sports caps that come on the 24-ounce bottles?  I may hoard those and keep them for my liter bottles.

Smart Water, though, really is the cleanest-tasting bottled water I've ever had.  Maybe they were onto something when they sucked the water straight from clouds.


Flavored Gum

Is gum considered "healthy?"  Truth be told I have no idea.  I know it contains less calories than candy...but that's about all I have got.  However, if you're trying to lose weight, this can certainly work to your advantage!  I found several miraculous gums last month that are flavored like some of my favorite candies!!

First off by Stride is Sour Patch Kids Gum.  I love the Red flavor, but Watermelon is by far my favorite.  It tastes exactly like Sour Patch Watermelon.

Even more exciting than the Sour Patch gum was when I discovered Wrigley Starburst Gum.  I've only gotten the Strawberry, but you can't tell me you don't love pink Starbursts.  That is exactly what this gum tastes like.  I wouldn't be too offended if they came out with a lemon one, but I can live without the cherry or orange.  I've bought 4 3-packs of this gum so far, and I really hope it isn't going anywhere soon!

Sadly, my last gum favorite (also by Wrigley) is seasonal.  It is the Extra Confetti Cake Pop gum.  Talk about having your cake and eating it too!  Chewing this gum is like hosting a birthday party in your mouth.  I have only found this gum at target in 3-packs, but rumor on the street is that you can find single packs in Dollar Stores.


Beauty Favorites

As much as I like to think that I explore the beauty realm, truth be told, I tend to find my favorites and stick with them.  I've been consciously trying to get myself to explore a bit when it comes to new products, but it's definitely a work in progress.

EcoTools Brushes

For the past few years, I have stuck to my tried-and-true Mary Kay brushes and my ELF Studio Line brushes.  I don't know what got into me one night, but I decided that I wanted new brushes.  So, between Walmart and Walgreens, I plopped down the money for some EcoTools brushes.  I got two travel-size sets and the large kabuki brush.

The first set I found was the Fresh and Flawless face set.  The size of these brushes leave something to be desired, but I am madly in love with the next to last brush in the picture.  That brush is the buffing concealer brush.  I like to use concealer on my eyelids instead of eye primer (I currently use Covergirl's Ready, Set, Gorgeous concealer for that) and then set it with a powder (same line as the concealer) to assist in covering up veins and insuring a smooth, flawless application of my eyeshadow colors.  This brush is what I use to buff the powder on my eyelids.  It was such a game changer for me.  The size of this brush is perfect for my eye area, and it is perfect for blending the powder in and keeping my shadow from falling all over my face throughout the day.

The next set of brushes I purchased were the Lovely Looks Set.  If I told you anything other than I bought these because I thought the flowers on the handles were too beautiful to pass up, I would be lying.  However, the brushes perform nicely, and I'm in love with the flat eyeliner brush for smudging a little bit of dark shadow along my eyes as a liner.  My favorite brush of the set, though, has to be the angled blush brush.  I always find having an angled blush brush helpful in blush placement and when contouring your cheekbones.  It fits nicely in the hollows of my cheeks to make that tedious process a bit more bearable (seriously, I cannot contour to save my life practically.  Anything to make it easier, I'll try).


The last brush I picked up was the Retractable Kabuki Brush.  This is hands down my favorite face brush I have ever purchased.  It has a nice, large head to get a good dusting of product without looking cakey, but because it's retractable, it's easy to store and won't get all wonky (and germy!) in your bag if you take it with you for touching up your powder throughout the day.  This brush was by far worth every penny I spent on it.



Love and Sunshine

My final favorite for February is a new scent by Bath and Body Works.  The scent is Love and Sunshine, and if you enjoy scents of theirs such as Beautiful Day, you will love Love and Sunshine.  It's very fresh, with a subtle fruity-floralness that just has me ready for spring!  I enjoy pairing it with my Addidas perfume Pure Lightness because the clean notes in Love and Sunshine compliment the absolute fresh factor of Pure Lightness.

My favorite products in the Love and Sunshine line are the shower gel and the Ultra Shea Body Cream.  My skin is terribly dry all year long, and the body cream adds moisture without leaving me sticky or with a gross residue behind.  Also, at the time of this post, Bath and Body Works is offering Buy 3, Get 3 Free from their Signature Collection line in stores and online!

Where Have I Been? NEDA Week 2015

Hey everybody.

I know I've been gone a long time.  If you know me in real life (which is the majority of my readers), you know that I've struggled with bulimia for the past nine years.  Well, maybe you didn't know it was nine years, but I've been very open about my recovery process.

I don't know what happened to me in October, but I had a complete and total relapse.  I will spare you the details, but it was ugly.  I was probably in my worst mental state that I had been in since first starting counseling in 2011.  I had several complete and utter mental breakdowns from October until the end of December (half of which happened at work...shout out to my beautiful family of coworkers for not just straight up having me committed...seriously.) and I realized that I couldn't, in good faith, give advice about getting healthy while I was destroying my body.

I made a promise on December 31, 2014 that I would not purge, starve, take energy supplements, cut, or do any of my self-destructive habits in 2015.  As of today I am 55 days clean, and have kept that promise.  I'm not going to sit here and say it was an easy decision, or that every single minute of every day I am still as gung-ho about it as I was New Years Eve.  It's not been easy.  Some days are harder than others.  There are days where the only thing that stops me from being destructive is that promise that I made to spend 2015 free.

I have been wanting to make a post about this for a while now, but I wasn't sure how to go about it. I do want to make it loud and clear, though, that every pound of the 110 pounds that I have lost was done in a healthy fashion. I did not starve, I did not purge, and I did not use diet supplements to lose the weight.  I tried as hard as I could, but I swear on my heart I did not lose 1 pound with my destructive habits. Last night, though, I realized that it is National Eating Disorders Awareness Week 2015 and figured that there was no better time than right now to raise awareness of the most fatal mental disorder.

Everybody knows somebody with an eating disorder.  Probably 80% of my coworkers didn't know that I was one more tick on their list. According to the National Association of Anorexia Nervosa and Associated Disorders (anad.org), up to 24 million Americans suffer from an eating disorder.  Eating Disorders don't discriminate, either.  You can be female, male, rich, poor, black, white, and/or speckled.  One of my biggest fears as a young woman deciding if I want children is that one day, due to my history with mental illness, my children may end up with an eating disorder.  I know the nightmare that I've lived through, and I don't want that for my children, or their children, or anybody else for that matter.

**I just realized that not everybody knows which eating disorder is which.  Eating Disorders are mental illnesses, not crash diets.  To put it in very VERY simple terms, Anorexia is a refusal to maintain a healthy body weight (there are 2 subtypes, non-purging and purging).  Bulimia is when one binges on large quantities of food then compensates by form of purging (self-induced vomiting, laxative abuse, compulsive exercise, and fasting are all considered forms of purging). Binge Eating Disorder, similarly to bulimia, is when an individual binges on large quantities of food but does not compensate by purging.  Finally, Eating Disorder Not Otherwise Specified (EDNOS) is disordered eating habits that can be a combination of any of the above.  My official diagnosis was bulimia because of how often I was purging, but I spent the majority of my "sick years" EDNOS.**

Just because someone "looks healthy" doesn't mean they aren't suffering from an eating disorder.  While the criteria of diagnosis for anorexia is refusal to maintain a normal weight and being 15% below what is considered a normal weight, most bulimics are a healthy weight or slightly overweight.  Also, Binge Eating Disorder (BED) has finally been recognized as an eating disorder.  Many people with BED are overweight or obese, and have the same health complications anybody with obesity faces.  Same goes for EDNOS.  They may binge one day, restrict three days, eat a healthy amount for two days, and have fluctuating weight the whole time.  You can't see a mental illness the way you can see when someone has a broken leg.

A great resource for opening the doors of communication if you suspect a friend or loved one has an eating disorder is in the "How to Help" section of this link.  If you want to talk to a friend or loved one who you suspect may have an eating disorder, there are right and wrong ways to do so.  First off, do not start off in an accusatory fashion.  The quickest way to shut down someone with an eating disorder is to start off a conversation with "I think you have an eating disorder."  It is tricky, your friend or loved one may get very angry with you.  It isn't them being angry.  It is the disease.  Eating Disorders are like having your own little (deadly) secret, and the host (which is just what I call the person suffering from the disease, the host body for the demon) will probably lie, deny, and lash out.  Starting off a private conversation with something specific, such as, "I noticed you aren't eating much for lunch lately. What's been going on?" or "I've heard you throwing up.  Do you need to talk?" will get you farther.  Maybe not much farther in the beginning, but offering an open line of communication shows your friend or loved one that you are there for them, and you're willing to listen to whatever they need to say.  Maybe they have had a lot of stress at home.  Maybe they have food poisoning.  Maybe they have an eating disorder.

If you suspect there is a problem, do not use phrases such as "You look fine," "You're not fat," "Just try portion control."  An eating disorder doesn't stem from weight (or a weight problem).  In my personal experience, I was fat, but I also had inward issues that I chose to project into my eating habits.  Even something as harmless as "You look healthy" can cause a downward spiral for someone suffering from an eating disorder.  They may think they want to look as thin as possible, and if people see them as healthy, they think they are failing.  Even the best meaning compliments on someone's body should just be avoided when talking to someone who is suffering from an eating disorder.  Their disease can skew anything to fuel the fire, and it will.
